Fresh Blueberry Cobbler recipe
Ingredients List:
Cooking spray.
4 cups of blueberries.
1 teaspoon of lemon juice.
1 cup of all-purpose flour.
½ cup of sugar.
1 teaspoon of baking powder.
1/8 teaspoon of ground nutmeg.
1 dash of salt.
1 tablespoon of vegetable oil.
½ teaspoon of vanilla extract.
2 large egg whites, lightly beaten.
3 tablespoons of sugar.
½ teaspoon of ground cinnamon.
Directions:
In a 9-inch square baking dish coated with cooking spray, combine the blueberries and lemon juice. Stir gently, then set aside.
In a bowl, combine the all-purpose flour, sugar, baking powder, ground nutmeg and salt. Make a well in the center of the mixture.
Combine the vegetable oil, vanilla extract and egg whites; stir well using a whisk.
Add the flour mixture, stirring just until moist.
Drop dough by spoonfuls onto the blueberry mixture to form 8 dumplings.
Bake at 350°F (180°C) for 35 minutes or until the filling is bubbly and dumplings are lightly browned.
