Blueberry Yogurt Cups recipe
Not quite a dessert, but certainly dessert-worthy, this recipe is suitable as an afternoon snack or a special treat. Fruity but not overly sweet, these creamy berry cups are fun to whip together and watch the colors swirl in the cup -- great for the whole family.
Ingredients List:
2 cups fresh blueberries
2 tablespoons fresh lemon juice
½ cup sugar
2 cups whipping cream
1 teaspoon lemon zest
½ teaspoon vanilla extract
Directions:
1. Combine blueberries, lemon juice, and sugar in a medium saucepan. Cook over medium heat for 8 to 10 minutes, until berries are softened, stirring to prevent burning. Remove from heat and set aside.
2. Meanwhile, beat the whipping cream in a large bowl until soft peaks form, 1 to 2 minutes. Gently mix in the lemon zest and vanilla.
3. Add the reserved blueberry mixture to the whipped cream and gently fold in until combines. Refrigerate until cold and serve in dessert cups.
