Blueberry Salsa recipe
Zesty, uplifting, and with a bit of a kick, this surprising salsa features fresh blueberries as its main ingredient. If you like, omit the garlic and onions for a sweeter dish, or omit the honey for a more savory taste. However you experiment, this perky salsa will light up any early summer menu.
Makes 3 to 4 cups.
Ingredients List:
2 medium tomatoes, finely chopped
1 cup fresh blueberries
½ cup finely chopped red onion
1 jalapeno pepper, finely chopped
2 tablespoons chopped fresh cilantro
2 tablespoons chopped fresh basil
2 cloves garlic, minced
2 tablespoons rice vinegar
2 tablespoons olive oil
1 teaspoon honey
Sea salt and pepper to taste
Directions:
Place all ingredients in a large mixing bowl; toss to combine well. Chill for at least 4 hours (preferably overnight) for flavors to develop. Serve with tortilla chips or over grilled meats.
