Blueberry Gingerbread recipe
Ingredients List:
½ cup of solid vegetable shortening.
1 cup of sugar.
1 medium egg.
2 cups of flour.
1 teaspoon of cinnamon.
½ teaspoon of ginger.
½ teaspoon of salt.
1 teaspoon of baking soda.
1 cup of buttermilk.
3 tablespoons of molasses.
1 ½ cups of blueberries, washed and dried.
3 tablespoons of sugar.
Directions:
Grease and flour a 9-inch square pan.
Cream the shortening and sugar, then beat in the egg.
Sift together the flour, cinnamon, ginger and salt.
Dissolve the baking soda in the buttermilk.
Alternately add the dry ingredients and buttermilk to the creamed mixture.
Mix in the molasses.
Fold in the blueberries.
Pour the batter into your prepared pan, then sprinkle with the sugar.
Bake at 350°F (180°C) until done.
Serve slightly warm.
